Not all tuna is the same.

On opening tins of tuna, it can be observed that they may differ somewhat from each other in terms of colour, consistency and even taste. 
 
Tuna are not the same in nature either. Some are dark coloured and disuniform and have fatty flesh prone to flaking.

Yellowfin tuna (Thunnus Albacares) is recognisable for the yellow colour of its dorsal and rear fins and is considered of primary quality the world over. Its flesh is pink in colour and exceptionally compact and tender.
