Salad with salmon, mushrooms and blueberries

Ingredients for four people

  • 2 150 g cans of Rio Mare Salmon in brine
  • 100g of tender mixed salad
  • 200g of fresh mushrooms
  • 100g of blueberries
  • 40 g of extra virgin olive oil
  • a sprig of parsley
  • grated lemon rind
  • salt
  • pepper


1. Chop the parsley and mix with the grated lemon rind, the olive oil and a pinch of salt and pepper; slice the mushrooms finely, season with the dressing and mix carefully.  

2. Drain the salmon, previously flaked with a fork, and add to the dressed mushrooms. Toss lightly. 

3. Add the green salad and the blueberries and serve immediately.
