Mackerel with sauté artichoke hearts

Ingredients for four people:

2 tender artichokes - 1 85g packet of Filetti di Sgombro al Naturale Rio Mare - 1 hard tomato - 2 twigs of fresh marjoram - 1 clove of garlic - 1 teaspoon of lemon juice - 5ml of oil - salt- pepper

The protein-packed taste of the tuna with the freshness and fibre of the artichokes combine to produce a wholesome and light dish that can be paired with a plate of pasta and an after-dinner piece of fruit.

Prep:
1. Clean the artichokes and eliminate all the hard leaves, thorny tips and the fuzzy inedible choke, then cut them into small thin slices.

2. Cut the garlic in half, brown it in a pan with some oil and then discard it. Add the artichokes and season with salt and pepper and then pour in 2 spoons of water and the lemon juice. Cook for several minutes until tender.

3. Add the leafed marjoram and the diced tomato to the artichokes and stir delicately. Serve hot with the drained fillets of mackerel.

For a complete and light meal why not add 200g of pumpkin and onion soup seasoned with some rosemary and followed by a piece of fresh fruit?
