Ingredients for four people:

100g of bread - 1 170g packet of Salmone Sott'olio Rio Mare - 500g of sweet and ripe truss tomatoes - 1 sweet capsicum – 40ml of extra virgin olive oil - 1 spoon of vinegar - 1/2 fresh cucumber - 1/4 white onion - salt

Prep:
1. Break the bread into small pieces and wet it for 20 minutes. Drain it and put it in a food mixer together with the tomato pieces, the peeled cucumber, the onion and the diced capsicum.

2. Blend for 2 minutes. Season with salt, dress with oil and vinegar and blend for another 2 minutes.

3. Add the well-drained and flaked salmon to the sauce, then pour into small glasses or bowls and serve immediately.

A tasty alternative: replace the vinegar with two spoons of unsweetened white yogurt.
