The fish caught by Rio Mare travels a long way before reaching your table. Its journey represents the choices that we make every day to protect the marine ecosystem. From fishing oceans to the tuna species, from different fishing methods to the processing of the loins  on-site, ending up with the canning and production processes. A transparent journey that we invite you to discover.

Tuna fishing oceans


The tuna caught for canning lives in equatorial waters between the two tropics. Around 77% of the tuna fished comes from the West Pacific Ocean and the Indian Ocean. The tuna used by Rio Mare is selected from among the species that inhabit these parts of the Ocean.The trawlers used for tuna fishing are long vessels measuring up to 100 metres, equipped with refrigerators to freeze the freshly caught fish in order to guarantee maximum safety and hygiene.

Yellowfin Tuna  (Thunnus Albacares) owes its name to the distinctive bright yellow colour of its dorsal and ventral fins. It can weigh up to 50/60kg and is the Rio Mare fish of choice when manufacturing its products because it is a guarantee of only the highest quality.
Skipjack Tuna (Euthynnus Pelamis) owes its name to the longitudinal stripes found on its belly. Unlike the better-known Yellowfin species, it is smaller (it can reach a weight of up to 3-4kg) and lives in shallower waters. Skipjack, with its light colour and pleasant flavour,  is the tuna most widely fished and used in the canning industry.

Methods and fishing vessels


Rio Mare’s fishing method of choice, it involves the use of freezer trawlers measuring up to 100 metres, capable of staying at sea for 2-3 months. Once a tuna school has been sighted, a small boat, known as a skiff, to which a large nylon net is attached, is lowered into the sea. The fishing boat makes a circular manoeuvre to join the two ends of the net and draws it tight at the bottom to form a purse, referred to as a seiner. The tuna caught is hauled aboard and frozen immediately in large freezers (-18°C)  to guarantee maximum hygiene and traceability.

POLE & LINE 


This is an almost artisanal fishing method which Rio Mare promotes on the Solomon Islands, a developing country. It is practised just a short distance from the coastline and results in the capture of smaller tuna like Skipjack. Once the schools have been identified, the fishermen throw small bait into the water and then lower their lines with special hooks to bait the fish which, once caught, is hauled onboard one by one. The vessels used by Rio Mare are equipped with modern fish freezing systems to guarantee its high levels of safety.

THE PREPARATION OF LOINS


The first processing stage of Rio Mare tuna takes places at plants located near the fishing grounds. The fish is frozen, their heads and tails are removed, they are meticulously cleaned, and then divided into slices to obtain large, well-cleaned loins which are then dispatched to the Cermenate plant, in the province of Como, for canning. 
Products requiring hand-processing, for example, Rio Mare Tuna Fillets, are canned directly at the fishing grounds, meaning that they are pre-packaged on their arrival in Italy.

The journey of the tuna loins originating from the fishing grounds ends at the Cermenate plant (province of Como) where more than 60% of Rio Mare products are manufactured.

The Cermenate plant, boasting a production capacity of 3,000,000 cans per day is the one of the largest, most modern and advanced in Europe. Production takes place in just 6 hours and involves defrosting, canning, sterilization, packaging and storage in the warehouse.

Rio Mare tuna has a fully traceable biography, from its origins to its arrival on the shelves of major food retailers.
